10. What would have happened if I had tried to cook it anyway
People sometimes assume heat fixes everything. It does not. If I had breaded and fried these slices, they likely would have leaked water, steamed under the crust, and browned unevenly because of the sugar coating from the soda.

11. If you want flavorful eggplant, here are safer ways I’ve used successfully
If your goal is better texture, dry-salt 1-inch slices with 1 to 1 1/2 teaspoons kosher salt per pound for 30 to 45 minutes, then blot well. If your goal is marinade flavor, salt first, then brush with a measured mixture such as 3 tablespoons olive oil, 1 tablespoon lemon juice, 2 minced garlic cloves, and 1 teaspoon smoked paprika for 20 minutes before cooking.
If you want sweetness, use something balanced and intentional, like 1 tablespoon pomegranate molasses in a marinade for 2 pounds of eggplant, or a glaze with 2 teaspoons honey and 1 tablespoon soy sauce after roasting. If you want coffee notes, use a tiny amount in a spice rub for meat served alongside eggplant, not steeped into the eggplant itself. And if you want pork flavor, render pancetta or bacon separately and scatter crisp bits over roasted slices at the end. Keep the functions separate: seasoning, moisture control, and garnish.
12. The closest legitimate comparison is not curing but contamination
I know that sounds harsh, but it’s the honest summary. Proper curing, brining, fermenting, and pickling all depend on controlled variables: salt percentage, acidity, temperature, time, oxygen exposure, and cleanliness. My experiment had time and refrigeration, but not the chemistry needed to make those variables work in my favor.
In my kitchen notes, I wrote: “Eggplant absorbed color faster than flavor, absorbed odor more than seasoning, and lost structure before gaining anything worth cooking.” That’s exactly what happened. The sponge-like texture of eggplant makes people think it will eagerly soak up deliciousness. It will also soak up nonsense.

Fresh August globe eggplant is already a good ingredient. When it’s harvested young enough, bitterness is often mild.
