This slow cooker Amish celery beef is the kind of comforting supper that feels extra satisfying on a busy weeknight. With just a handful of simple ingredients, the beef cooks low and slow until tender while the celery softens into the savory juices, making a humble, cozy meal with old-fashioned appeal. It is a practical recipe that fits right into family life, especially when you want something hearty without a lot of fuss.

Serve this beef over mashed potatoes, buttered egg noodles, or fluffy white rice to catch every bit of the rich cooking liquid. A side of warm dinner rolls, simple green beans, or a crisp garden salad rounds it out nicely, and for a true comfort-food plate, I like to add a spoonful of applesauce or carrots on the side.

Ingredients

1 1/2 to 2 pounds beef ranch steak

6 celery stalks, chopped into 2-inch pieces
1 packet dry onion soup mix
1 can (10 1/2 ounces) condensed cream of mushroom soup
1 cup beef broth

Directions

1. Lightly coat the inside of your slow cooker with nonstick spray if desired. Lay the beef ranch steak in the slow cooker, then nestle the chopped celery all around the meat.

2. In a medium bowl, stir together the dry onion soup mix, condensed cream of mushroom soup, and beef broth until mostly smooth.

3. Pour the soup mixture evenly over the beef and celery, covering the top of the meat as much as possible.

4. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is fork-tender and the celery is very soft.

5. Transfer the beef to a cutting board, slice or shred it, then return it to the slow cooker and spoon the sauce over the top before serving.

Variations & Tips

For a thicker gravy: If you like a richer sauce, remove the cooked beef and whisk 1 tablespoon cornstarch with 2 tablespoons cold water. Stir it into the slow cooker, cover, and cook on high for 10 to 15 minutes before serving the beef back in the gravy.

For extra vegetables: Add a few carrots or a sliced onion along with the celery for a fuller one-pot meal. This is a nice way to stretch the dish a little further for bigger family dinners.

For picky eaters: Chop the celery a bit smaller so it melts more into the sauce as it cooks. If your family prefers a smoother texture, you can serve the beef with the celery tucked underneath and spoon just the gravy over the top.

For the best cut and texture: Ranch steak becomes tender with slow cooking, but it helps to slice against the grain before serving. If your piece of beef is especially lean, check it a little earlier so it stays tender and does not dry out.

Make-ahead tip: You can chop the celery and mix the sauce the night before, then store them separately in the refrigerator. In the morning, all you need to do is assemble everything in the slow cooker and turn it on.
