Using a whole chicken keeps it budget-friendly and gives you tender meat with plenty of savory pan juices, while the simple seasoning and vegetables do most of the work in the oven. It has that classic roast chicken comfort that makes an ordinary weeknight feel like Sunday dinner, but the prep is almost unbelievably easy.
This chicken is delicious served with the softened roasted vegetables from the dish, plus mashed potatoes, buttered noodles, rice, or a simple green salad to round things out. If you want to stretch it even further, spoon some of the pan juices over everything and serve with warm bread to soak up the flavorful drippings.

Ingredients
1 whole raw chicken, about 4 to 5 pounds
Directions
1. Preheat the oven to 375°F. Lightly grease a large glass casserole dish if needed. Pat the whole chicken dry with paper towels and place it breast-side up in the dish. Scatter the baby potatoes and baby carrots around the chicken.
2. Pour the melted butter over the chicken and vegetables, then sprinkle the dry onion soup mix evenly over the top. Rub a little of the seasoning over the chicken skin so it is well coated.
3. Roast uncovered for 1 hour 30 minutes to 1 hour 45 minutes, or until the chicken reaches 165°F in the thickest part of the thigh and the juices run clear. If the top starts browning too quickly, loosely tent with foil during the last part of baking.
4. Let the chicken rest for 10 to 15 minutes before carving. Spoon some of the pan juices over the sliced chicken and serve with the roasted potatoes and carrots.
Variations & Tips
Add onion wedges: If you do not mind going beyond five ingredients, onion wedges tucked around the chicken add even more flavor to the pan juices and make the dish taste like it cooked all day.
Use a rack if preferred: If you like the skin a little crisper, place the chicken on a small oven-safe rack inside the casserole dish so some of the fat can drip below while the vegetables roast underneath.
Check early for smaller birds: A smaller chicken may be done sooner, so start checking the temperature around the 1 hour 15 minute mark to avoid overcooking the breast meat.
Meal prep bonus: Leftover chicken is great for sandwiches, soup, wraps, or chicken salad the next day, which is one reason I love making a whole bird even on a busy weeknight.
