These southern 4-ingredient brown sugar bacon crackers are the kind of easy party snack that disappears before you can set down the tray. They hit that perfect sweet-salty-crispy combination with almost no prep, which is exactly why I keep them in my back pocket for game days, holiday gatherings, and those last-minute “bring an appetizer” moments. They’re often called bacon crackers or crack crackers in Southern-style party food circles, and once you taste the buttery cracker under the caramelized bacon topping, it’s easy to understand why they have such a loyal following.

Serve these warm or at room temperature alongside other tailgate favorites like pimento cheese dip, sausage balls, deviled eggs, or a veggie tray to balance out the richness. They also pair really well with sweet tea, lemonade, cold soda, or a crisp beer if you’re putting together a casual game-day spread. Since they’re rich and savory, a fruit tray or pickle plate on the side makes a nice contrast.

Southern 4-Ingredient Brown Sugar Bacon Crackers

Ingredients

1 sleeve buttery rectangular crackers, such as Club crackers

8 slices bacon, cut into thirds
3/4 cup packed brown sugar
1/4 teaspoon cayenne pepper

Directions

1. Preheat your oven to 350°F. Line a rimmed baking sheet with foil and place a wire rack on top if you have one for easier cleanup and extra crisp bacon.

2. Arrange the crackers in a single layer on the rack or directly on the foil-lined baking sheet.

3. Wrap each cracker with one piece of bacon, keeping the bacon snug but not stretched too tightly, and place them seam-side down.

4. Sprinkle each cracker generously with brown sugar, then finish with a light pinch of cayenne pepper over the tops.

5. Bake for 20 to 25 minutes, or until the bacon is cooked through and crisp around the edges and the brown sugar is melted and bubbly. Let them cool for 5 minutes before serving so the glaze can set slightly.

Variations & Tips

Make It Less Spicy: If you want the classic sweet-and-savory version without any heat, simply leave out the cayenne. They’ll still have plenty of flavor from the bacon and brown sugar.

Use Thick-Cut Carefully: Regular bacon works best here because it crisps in the same amount of time the crackers bake. Thick-cut bacon can stay chewy unless you par-cook it for a few minutes first.

Prep Ahead: You can assemble the crackers a few hours in advance and refrigerate the tray until you’re ready to bake. This is one of my favorite tricks for busy party days when oven space and timing get a little chaotic.

Try a Sweet Heat Twist: For a bolder tailgate version, add a tiny drizzle of maple syrup after baking or swap the cayenne for a pinch of chili powder. It gives the crackers a slightly different finish without adding extra work.

Cleanup Tip: Definitely use foil on your baking sheet because the sugar bubbles and hardens as it cools. Once the tray is cool, cleanup is so much easier if you can just lift off the foil and toss it.
