This 5-ingredient slow cooker Italian sausage dinner is the kind of vintage summer recipe that earns a permanent spot in the weeknight rotation. It leans on simple pantry and produce staples, lets the crock do the heavy lifting, and turns raw Italian sausage links into a rich, cozy meal with barely any prep. Recipes like this became popular because they stretch everyday ingredients into something hearty and satisfying, which is exactly why I keep coming back to them on busy workdays.

Serve this over buttered egg noodles, rice, creamy mashed potatoes, or with thick slices of crusty bread to catch the sauce. For a lighter summer plate, add a green salad, steamed green beans, or simple roasted zucchini on the side. If you want to round it out for guests, a glass of red wine or sparkling iced tea pairs nicely with the sausage and tomato flavors.

Ingredients

2 pounds raw Italian sausage links

2 green bell peppers, sliced
1 large yellow onion, sliced
1 jar (24 ounces) pasta sauce
1 can (14.5 ounces) diced tomatoes, undrained

Directions

1. Lightly coat the inside of your slow cooker if needed for easy cleanup. Spread half of the sliced peppers and onions in the bottom, then lay the raw Italian sausage links on top in an even layer.

2. Add the remaining peppers and onions over the sausage. Pour in the pasta sauce and diced tomatoes, making sure the sausage is mostly covered.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the sausage is fully cooked and the vegetables are very tender.

4. If you like, spoon some sauce over the top and let everything rest for 5 minutes before serving. Serve whole sausage links with plenty of peppers, onions, and sauce.

Variations & Tips

Make it heartier: Add baby potatoes or serve the sausage over cooked pasta for a bigger meal that stretches to feed extra people. If you add potatoes to the slow cooker, place them on the bottom so they cook through evenly.

Use mixed peppers: Green peppers give this recipe that classic vintage flavor, but red, yellow, or orange bell peppers add a sweeter taste and a brighter look if that’s what you have in the fridge.

Brown for extra flavor: You can put the sausage links under the broiler or sear them in a skillet for a few minutes before adding them to the slow cooker if you want a deeper browned flavor, but it is absolutely optional for busy days.

Meal prep tip: Slice the peppers and onion the night before and refrigerate them in a container so you can assemble everything in the crock in just a couple of minutes the next morning.

Sauce consistency: If you want a thicker sauce, remove the lid for the last 20 to 30 minutes of cooking on high, or serve with bread, rice, or noodles to soak up every bit.
