Creamed corn adds texture and flavor, while cheddar cheese makes the casserole moreish and cheesy. All told, the dish becomes the ideal Thanksgiving side.
This casserole is tasty as is, but you can add seasonings to jazz it up even further. Onion powder, garlic powder, herbs and spices all make delicious additions. Cheesy Corn Casserole
Ingredients1 (8 1/2-ounce) box Jiffy Corn Muffin Mix
2 (11-ounce) cans creamed corn
1/2 cup butter, melted
1/2 cup sour cream
1 egg, beaten
2 cups shredded cheddar cheese, divided
Cooking spray
Directions1. Preheat the oven to 350 degrees F.
2. In a mixing bowl, combine the corn muffin mix and creamed corn.
3. Add the butter and sour cream and whisk well to combine.
4. Stir in the beaten egg, and fold in half of the cheddar cheese.
5. Spread the mixture in a 9x13 casserole dish coated with cooking spray, and top with the remaining cheese.
6. Bake for 40 to 45 minutes or until the middle is set.
Serve warm.
