Green beans and bacon are a match made in heaven, but they're even more delicious with an additional secret ingredient: the oven. Roasting green beans makes them deliciously caramelized. In the recipe below, they get a bit of extra help with some roasted onions for a low-carb dish with more than its fair share of sweetness.
In this recipe, you'll cook just enough bacon to have the fat you'll need to cook your beans, but consider saving bacon fat every time you cook up a few slices for breakfast. The rich, smoky fat makes chicken or eggs even more delicious.
Low Carb Green Beans & Bacon 
Ingredients1/2 pound bacon
2 pounds green beans, strung
1 white onion, frenched or diced
1/4 teaspoon salt
1/4 teaspoon pepper
Directions 1, Preheat the oven to 450 F.
2. Arrange the bacon on a wire rack over a rimmed baking sheet. Bake for 15 minutes, or until crisp.
3. Remove the bacon from the oven and set aside. Carefully strain the fat.
4. Toss the beans, onion, salt and pepper together. Drizzle with about 3-4 tablespoons of the fat, and toss well to combine.
5. Arrange the beans in an even layer on a baking sheet. Roast for 20 minutes, tossing once to ensure they are cooking evenly.
6. Chop the bacon and scatter over the green beans for the last minute of cooking, just to heat through.
