Ingredients
8 ounces cream cheese, softened
8 ounces sliced deli roast beef, chopped or torn into bite-size pieces
1 green bell pepper, finely chopped
1 small onion, finely chopped
1 cup shredded provolone cheese
Directions
1. Lightly coat the inside of the slow cooker with nonstick spray if desired. Add the softened cream cheese, chopped roast beef, green bell pepper, onion, and shredded provolone cheese to the slow cooker.
2. Stir everything together as well as you can, then cover and cook on low for 1 1/2 to 2 hours, stirring once or twice during cooking, until the cheese is fully melted and the vegetables are softened.
3. Once the dip is hot and smooth, stir again until evenly combined. Taste and adjust with a little black pepper if you like, then keep the slow cooker on warm for serving.
