6 bone-in, skin-on chicken thighs
2 large yellow onions, thinly sliced
1 cup French dressing
1 packet dry onion soup mix

Directions

1. Preheat the oven to 350°F and lightly grease a blue speckled enamel baking dish or a 9x13-inch baking pan.

2. Spread the sliced onions evenly across the bottom of the baking dish, then arrange the chicken thighs on top in a single layer.

3. In a small bowl, stir together the French dressing and dry onion soup mix until well blended, then pour the mixture evenly over the chicken.

4. Cover the dish tightly with foil and bake for 45 minutes.

5. Remove the foil, spoon some of the sauce over the chicken, and continue baking 25 to 35 minutes more, until the chicken is cooked through, the onions are tender, and the sauce has darkened and thickened slightly.

6. Let the chicken rest for 5 to 10 minutes before serving so the juices settle and the sauce can be spooned over each piece.

Use chicken pieces you have: If thighs are not what you have on hand, this works well with bone-in drumsticks or a mix of thighs and breasts. Just keep an eye on the white meat so it does not overcook before the dark meat is ready.
