These southern 4-ingredient BLT stuffed tomatoes are the kind of easy little party bite that disappears fast, especially in the summer when tomatoes are sweet and bacon just makes everything better. They take the familiar flavors of a BLT and tuck them into juicy cherry tomatoes for a cool, creamy, salty bite that feels right at home at cookouts, potlucks, baby showers, and family snacking trays.
Serve these chilled on a platter with toothpicks or set them alongside sandwiches, grilled chicken, burgers, or a big bowl of pasta salad. They also fit in nicely on a snack board with fresh fruit, deviled eggs, and crunchy chips, and a glass of sweet tea or lemonade makes the whole spread feel extra summery.
Southern 4-Ingredient BLT Stuffed Tomatoes
Servings: 8
Ingredients
24 cherry tomatoes
6 slices bacon, cooked crisp and crumbled
1/2 cup mayonnaise
1 cup shredded lettuce
Directions
1. Wash and dry the cherry tomatoes. Slice a small piece off the top of each one, then use a small spoon or knife to gently scoop out the seeds and centers. Set the hollowed tomatoes upside down on paper towels for a few minutes so any extra juice can drain away.
2. In a small bowl, stir together the mayonnaise, crumbled bacon, and shredded lettuce until everything is evenly coated. The filling should be creamy but still packed with plenty of bacon and lettuce texture.
3. Spoon or pipe the filling into each tomato, mounding it slightly on top so every bite gets plenty of that BLT flavor.
4. Chill the stuffed tomatoes for 15 to 30 minutes before serving so they firm up a bit and taste nice and cool. Arrange on a serving plate and serve fresh.
Variations & Tips
Make-ahead tip: You can hollow out the tomatoes and mix the filling a few hours ahead, but wait to fill them until closer to serving time for the freshest texture.
Picky-eater version: If someone in the family does not love lettuce texture, chop it extra fine so it blends more smoothly into the filling while still giving that classic BLT taste.
Extra-crisp bacon: Make sure the bacon is fully crisp before crumbling so it stays crunchy against the creamy mayonnaise filling.
Easy party trick: If you want them to look a little neater for a shower or cookout tray, use a small piping bag or a zip-top bag with the corner snipped off to fill the tomatoes.
Larger tomato option: If you cannot find cherry tomatoes, small Campari or cocktail tomatoes can work too. Just hollow them out, fill them a little more generously, and expect fewer servings.
