2 cups yellow cornmeal

1. In a medium heatproof bowl, stir together the cornmeal and salt.
2. Carefully pour in 1 1/2 cups of boiling water and stir until a thick, scoopable dough forms. If the mixture seems dry or crumbly, add a little more hot water, a tablespoon at a time, until it holds together when pressed.
3. Let the mixture rest for 2 to 3 minutes, just until it is cool enough to handle. Scoop out small portions and flatten them gently into patties about 1/2 inch thick.
