This slow cooker Amish celery beef is the kind of simple, old-fashioned supper that feels especially welcome on a busy day. With just four ingredients, the beef cooks low and slow until it turns tender, while the celery softens down and helps flavor the rich cooking juices. It is a practical, no-fuss dinner with roots in hearty home cooking, and I love it because it gives you that comforting pot-roast feeling with hardly any hands-on work.
Serve this beef with mashed potatoes, buttered egg noodles, or plain white rice to catch all of the savory juices. A side of green beans, glazed carrots, or a simple lettuce salad rounds it out nicely, and soft dinner rolls make this meal feel especially cozy for Sunday supper or a cold-weather family dinner.
Slow Cooker 4-Ingredient Amish Celery Beef
Servings: 6
Ingredients
1 beef top blade roast, about 3 to 4 pounds
8 to 10 fresh celery stalks, trimmed
1 packet dry onion soup mix, about 1 ounce
1 can condensed cream of mushroom soup, about 10.5 ounces
Directions
1. Lightly coat the inside of the slow cooker with nonstick spray if desired for easier cleanup. Place the beef top blade roast in the slow cooker.
2. Spread the condensed cream of mushroom soup over the top of the roast as evenly as you can.
3. Sprinkle the dry onion soup mix over the soup-covered roast.
4. Lay the fresh celery stalks across the top of the roast, covering most of the surface.
5. Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours, until the beef is very tender and easy to pull apart with a fork.
6. Transfer the beef to a serving platter, spoon some of the softened celery and juices over the top, and serve hot.
Variations & Tips
For extra gravy: If you like more sauce for potatoes or noodles, add 1/2 cup beef broth at the beginning. At the end of cooking, you can whisk the juices with a little cornstarch slurry in a saucepan for a thicker gravy.
For picky eaters: If someone at the table is unsure about celery, serve the beef with the celery set off to the side. The celery gives the roast wonderful flavor as it cooks, even for family members who do not want much of it on their plate.
Make it heartier: Add peeled carrots or small potatoes around the roast during the last few hours of cooking if your slow cooker has enough room. That turns this into more of a full one-pot supper.
Slice or shred: This roast can be served in neat slices if you handle it gently, or shredded into big tender pieces for a more rustic meal. I usually choose whichever style matches the side dish I am serving.
Best leftover idea: Leftover beef is delicious warmed up over toast, spooned onto egg noodles, or tucked into a sandwich roll with a little extra gravy. Store leftovers in the refrigerator with some of the juices so the meat stays moist.
