These Low Carb 3-Ingredient Ham Cheddar Bites are exactly the kind of thing my Uncle Joe would whip up whenever neighbors dropped by unannounced. They’re salty, cheesy, a little bit melty, and they disappear fast. You only need deli ham, cheddar, and a touch of mayonnaise to help everything stick and turn golden in the oven. They’re perfect when you want something fresh from the oven that feels a little special, but you don’t have time (or energy) for a long ingredient list.
Serve these ham cheddar bites hot off the pan on a simple platter with toothpicks for easy grabbing. They pair really well with crunchy raw veggies like celery sticks, cucumber slices, or bell pepper strips to balance the richness. A small bowl of grainy mustard or sugar-free barbecue sauce on the side makes a fun dipping option that keeps things low carb. If you’re putting together a bigger spread, add a green salad or a simple charcuterie-style board with olives and pickles to round everything out.
Low Carb Ham Cheddar BitesServings: 6
Ingredients
12 thin slices deli ham (about 8–10 oz total, preferably rectangular or large round slices)
6 oz sharp cheddar cheese, cut into 12 thick batons or sticks (about 2 to 2 1/2 inches long)
2 tbsp mayonnaise
Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Pat the ham slices dry with a paper towel if they look wet; this helps them brown and stick better.
Lay the ham slices flat on a cutting board. Spread a very thin layer of mayonnaise over each slice, going almost to the edges. This helps the ham grip the cheese and turn glossy and golden as it bakes.
Place one cheddar stick along the short edge of each ham slice. Roll the ham tightly around the cheese so it forms a snug cylinder, with the seam side down. Press gently to help the seam stick.
Arrange the rolled ham cheddar bites seam-side down on the prepared baking sheet, leaving a little space between each one so they can brown.
Bake for 8–10 minutes, or until the ham edges look lightly browned and the cheddar is glossy and just starting to melt out at the ends. Keep an eye on them during the last couple of minutes so the cheese doesn’t completely escape.
Remove the pan from the oven and let the bites cool for 3–5 minutes; they will firm up slightly as they sit, which makes them easier to pick up and eat.
Transfer the ham cheddar bites to a serving platter and serve warm. If you like, insert toothpicks into each roll to make them easy for guests to grab.
Variations & Tips
You can swap the cheddar for another firm, low-moisture cheese like Colby Jack, pepper jack, or gouda; just keep the pieces thick enough that they don’t melt away completely. If your deli ham slices are very large, you can cut them in half and make smaller bites, or double up the cheese for a heartier snack. For a bit of heat, use a spicy mayo or add a smear of prepared horseradish or mustard underneath the cheese (this technically adds another ingredient, so keep it optional if you’re sticking to the 3-ingredient idea). To prep ahead, roll the ham and cheese with mayo, place on a tray, cover tightly, and refrigerate for up to 24 hours; bake just before serving. For food safety, keep deli ham refrigerated at or below 40°F (4°C), and don’t leave the baked bites at room temperature for more than 2 hours (1 hour if it’s very warm). Reheat leftovers in a 350°F (175°C) oven or air fryer until warmed through rather than microwaving, which can make the cheese leak and the ham rubbery.
